Shandong Style Seafood Congee

Ingredients

  • 1 cup jasmine rice
  • 6 cups chicken broth
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 cup mixed seafood (shrimp, squid, and scallops)
  • 2 green onions, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and white pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Rinse the jasmine rice under cold water and add it to the boiling broth.
  3. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  4. Add the minced ginger and garlic to the congee and continue to simmer for another 15 minutes.
  5. Add the mixed seafood and cook for an additional 10 minutes, or until the seafood is fully cooked.
  6. Stir in the soy sauce, sesame oil, and season with salt and white pepper to taste.
  7. Garnish with sliced green onions before serving.
