Ingredients
- 1 pound pork loin, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1/2 cup pineapple chunks
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Instructions
- Coat the pork pieces in cornstarch, then dip in beaten eggs.
- Heat vegetable oil in a large pan over medium-high heat. Fry the pork until golden brown and cooked through. Remove and set aside.
- In the same pan, sauté the bell peppers, onion, and pineapple chunks until slightly tender.
- In a small bowl, mix together ketchup, rice vinegar, brown sugar, soy sauce, ginger, and garlic. Pour the sauce into the pan with the vegetables.
- Bring the sauce to a simmer, then add the cooked pork back into the pan.
- Stir in the cornstarch mixture to thicken the sauce. Cook for another 2-3 minutes until the sauce coats the pork and vegetables.
