Ingredients
- 2 cups all-purpose flour
- 1 cup boiling water
- 1 cup chopped scallions
- 2 tablespoons sesame oil
- 1/2 teaspoon salt
- Vegetable oil for frying
Instructions
- In a large bowl, mix the flour and boiling water until a dough forms. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
- Divide the dough into 4 equal pieces. Roll each piece into a thin circle.
- Brush the surface of the dough with sesame oil, then sprinkle with salt and chopped scallions.
- Roll up the dough into a long cylinder, then coil it into a round dough ball. Flatten the dough ball with a rolling pin to form a pancake.
- Heat vegetable oil in a pan over medium heat. Fry the pancakes until golden brown and crispy on both sides.
- Remove from the pan and drain on paper towels. Cut into wedges and serve hot.
