Ingredients

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 1 cup chopped scallions
  • 2 tablespoons sesame oil
  • 1/2 teaspoon salt
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix the flour and boiling water until a dough forms. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
  2. Divide the dough into 4 equal pieces. Roll each piece into a thin circle.
  3. Brush the surface of the dough with sesame oil, then sprinkle with salt and chopped scallions.
  4. Roll up the dough into a long cylinder, then coil it into a round dough ball. Flatten the dough ball with a rolling pin to form a pancake.
  5. Heat vegetable oil in a pan over medium heat. Fry the pancakes until golden brown and crispy on both sides.
  6. Remove from the pan and drain on paper towels. Cut into wedges and serve hot.
