Ingredients
- 1 lb beef tripe, cleaned and sliced

- 1 tbsp sugar
- 4 cups water
Instructions
- In a pot, blanch the beef tripe in boiling water for 5 minutes. Drain and set aside.
- Heat some oil in the pot, add ginger, green onions, and star anise. Stir-fry until fragrant.
- Add the blanched beef tripe, soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir well.
- Pour in the water and bring to a boil. Then reduce heat to low, cover, and simmer for 2 hours until the beef tripe is tender.
