Shanghai Style Braised Duck (上海红烧鸭)
上海红烧鸭 (Shanghai Style Braised Duck) is a classic dish in Shanghai cuisine, known for its rich and savory flavors. This recipe combines tender duck meat with a fragrant and flavorful braising sauce, creating a delicious and comforting meal.
Ingredients
- 1 whole duck, about 4 lbs, chopped into pieces
- 3 slices ginger
- 3 green onions, cut into 2-inch pieces
- 1 star anise
- 2 tbsp Shaoxing wine
- 3 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp sugar
- 1 tsp salt
- 4 cups water
Instructions
- In a large pot, blanch the duck pieces in boiling water for 5 minutes. Drain and set aside.
- Heat some oil in the pot and sauté the ginger, green onions, and star anise until fragrant.
- Add the blanched duck pieces back into the pot. Pour in the Shaoxing wine, soy sauce, dark soy sauce, sugar, and salt. Stir to coat the duck pieces evenly.
- Pour in the water and bring to a boil. Then reduce the heat to low, cover, and simmer for 1.5 hours, or until the duck is tender.
- Uncover the pot and continue to simmer for another 20 minutes, or until the sauce thickens.
- Transfer the braised duck to a serving dish, garnish with green onions, and serve hot.
