Shanghai Style Braised Duck (上海红烧鸭)

Ingredients

  • 1 whole duck, about 4 lbs, chopped into pieces
  • 3 slices ginger
  • 3 green onions, cut into 2-inch pieces
  • 1 star anise
  • 2 tbsp Shaoxing wine
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 cups water

Instructions

  1. In a large pot, blanch the duck pieces in boiling water for 5 minutes. Drain and set aside.
  2. Heat some oil in the pot and sauté the ginger, green onions, and star anise until fragrant.
  3. Add the blanched duck pieces back into the pot. Pour in the Shaoxing wine, soy sauce, dark soy sauce, sugar, and salt. Stir to coat the duck pieces evenly.
  4. Pour in the water and bring to a boil. Then reduce the heat to low, cover, and simmer for 1.5 hours, or until the duck is tender.
  5. Uncover the pot and continue to simmer for another 20 minutes, or until the sauce thickens.
  6. Transfer the braised duck to a serving dish, garnish with green onions, and serve hot.
