Shanghai Style Braised Lamb (上海红烧羊肉)

Ingredients

  • 1.5 lbs lamb shoulder, cut into chunks
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, cut into 2-inch pieces
  • 2 star anise
  • 1 cinnamon stick
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 2 cups water
  • 1 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
  2. Add lamb chunks to the pot and brown on all sides.
  3. Pour in soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir to coat the lamb.
  4. Add star anise, cinnamon stick, and water to the pot. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the lamb is tender.
  5. Once the lamb is tender, remove the ginger, garlic, green onions, star anise, and cinnamon stick from the pot.
  6. Simmer the sauce until it thickens, then serve the braised lamb hot with steamed rice.
