Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1 cup diced cooked ham
  • 1/2 cup frozen peas, thawed
  • 1/4 cup diced carrots
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and white pepper. Set aside.
  2. Heat vegetable oil in a large wok or skillet over medium heat. Add beaten eggs and scramble until just set. Remove from the wok and set aside.
  3. In the same wok, add a little more oil if needed. Stir-fry garlic, green onions, carrots, and ham for 2-3 minutes.
  4. Add cooked rice and peas to the wok. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
  5. Pour the sauce mixture over the rice and stir to combine. Cook for an additional 2-3 minutes.
  6. Finally, add the scrambled eggs back into the wok and stir to combine with the rice. Cook for another minute, then remove from heat.
