上海炒饭 (Shanghai Style Fried Rice) is a popular dish in Shanghai cuisine, known for its savory flavors and aromatic ingredients.
Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1 cup diced cooked ham
- 1/2 cup frozen peas, thawed
- 1/4 cup diced carrots
- 3 green onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon white pepper
- 2 tablespoons vegetable oil
Instructions
- In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and white pepper. Set aside.
- Heat vegetable oil in a large wok or skillet over medium heat. Add beaten eggs and scramble until just set. Remove from the wok and set aside.
- In the same wok, add a little more oil if needed. Stir-fry garlic, green onions, carrots, and ham for 2-3 minutes.
- Add cooked rice and peas to the wok. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
- Pour the sauce mixture over the rice and stir to combine. Cook for an additional 2-3 minutes.
- Finally, add the scrambled eggs back into the wok and stir to combine with the rice. Cook for another minute, then remove from heat.
