Shanghai-Style Soup Dumplings (小笼包)

Ingredients

  • 1 lb ground lamb
  • 2 cups chicken broth
  • 2 cups all-purpose flour
  • 1/2 cup water
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, finely chopped
  • 1 inch ginger, grated

Instructions

  1. In a bowl, mix the ground lamb, soy sauce, sesame oil, green onions, and ginger. Set aside.
  2. In a separate bowl, combine the flour and water to make the dumpling dough. Knead until smooth, then let it rest for 20 minutes.
  3. Roll out the dough and cut it into small circles. Place a spoonful of the lamb mixture in the center of each circle and seal the dumplings.
  4. In a large pot, bring the chicken broth to a boil. Place the dumplings in a steamer basket and steam for 15 minutes.
  5. Serve the 小笼包 hot with dipping sauce.
