Ingredients

  • 1 kg chicken feet
  • 2 tbsp Sichuan peppercorns
  • 3-4 dried red chilies
  • 3 green onions, chopped
  • 3 slices ginger
  • 1/4 cup soy sauce
  • 1/4 cup Shaoxing wine
  • 2 tbsp sugar
  • 1 tbsp black vinegar
  • 1 tsp salt
  • 4 cups water

Instructions

  1. Wash the chicken feet and trim the nails. Place them in a pot of boiling water for 5 minutes, then drain and set aside.
  2. In a separate pot, dry roast the Sichuan peppercorns and dried red chilies until fragrant.
  3. Add the green onions, ginger, soy sauce, Shaoxing wine, sugar, black vinegar, salt, and water to the pot with the roasted spices.
  4. Add the chicken feet to the pot and bring to a boil. Then, reduce the heat and simmer for 1 hour, or until the chicken feet are tender.
  5. Once cooked, transfer the chicken feet to a serving dish and garnish with additional chopped green onions if desired.
