Ingredients
- 1 kg chicken feet
- 2 tbsp Sichuan peppercorns
- 3-4 dried red chilies
- 3 green onions, chopped
- 3 slices ginger
- 1/4 cup soy sauce
- 1/4 cup Shaoxing wine
- 2 tbsp sugar
- 1 tbsp black vinegar
- 1 tsp salt
- 4 cups water
Instructions
- Wash the chicken feet and trim the nails. Place them in a pot of boiling water for 5 minutes, then drain and set aside.
- In a separate pot, dry roast the Sichuan peppercorns and dried red chilies until fragrant.
- Add the green onions, ginger, soy sauce, Shaoxing wine, sugar, black vinegar, salt, and water to the pot with the roasted spices.
- Add the chicken feet to the pot and bring to a boil. Then, reduce the heat and simmer for 1 hour, or until the chicken feet are tender.
- Once cooked, transfer the chicken feet to a serving dish and garnish with additional chopped green onions if desired.
