Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup vegetable oil for frying
- 1/2 cup sugar
- 1/4 cup rice vinegar
- 1/4 cup ketchup
- 1 tablespoon soy sauce
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 bell pepper, diced
- 1 onion, diced
Instructions
- Pat the shrimp dry with paper towels. Dredge the shrimp in cornstarch, then dip into the beaten eggs.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the shrimp in batches until golden brown and crispy. Remove and drain on paper towels.
- In a separate pan, combine sugar, rice vinegar, ketchup, soy sauce, ginger, and garlic. Cook over medium heat until the sugar has dissolved and the sauce has slightly thickened.
- Add the diced bell pepper and onion to the sauce, and cook for a few minutes until they are slightly softened.
