Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup vegetable oil for frying
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 bell pepper, diced
  • 1 onion, diced

Instructions

  1. Pat the shrimp dry with paper towels. Dredge the shrimp in cornstarch, then dip into the beaten eggs.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the shrimp in batches until golden brown and crispy. Remove and drain on paper towels.
