Shanghai Style Sweet and Sour Tofu (上海糖醋豆腐)

Ingredients

  • 1 block of firm tofu, cut into cubes
  • 1/2 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1/2 cup water
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ketchup
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. In a bowl, coat the tofu cubes with cornstarch.
  2. Heat the vegetable oil in a pan over medium heat and fry the tofu until golden brown. Remove and set aside.
  3. In the same pan, add the diced bell peppers, onion, and garlic. Sauté until the vegetables are tender.
  4. In a separate bowl, mix the sugar, rice vinegar, soy sauce, water, and ketchup to create the sweet and sour sauce.
  5. Pour the sauce into the pan with the vegetables and bring to a simmer.
  6. Add the fried tofu back into the pan and stir to coat with the sauce.
  7. Stir in the cornstarch slurry to thicken the sauce.
  8. Serve the Shanghai Style Sweet and Sour Tofu hot with steamed rice.
