上海糖醋豆腐 (Shanghai Style Sweet and Sour Tofu) is a classic dish in Shanghai cuisine, known for its perfect balance of sweet and sour flavors combined with the smooth texture of tofu.
Ingredients
- 1 block of firm tofu, cut into cubes
- 1/2 cup cornstarch
- 2 tablespoons vegetable oil
- 1/2 cup sugar
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1/2 cup water
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ketchup
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions
- In a bowl, coat the tofu cubes with cornstarch.
- Heat the vegetable oil in a pan over medium heat and fry the tofu until golden brown. Remove and set aside.
- In the same pan, add the diced bell peppers, onion, and garlic. Sauté until the vegetables are tender.
- In a separate bowl, mix the sugar, rice vinegar, soy sauce, water, and ketchup to create the sweet and sour sauce.
- Pour the sauce into the pan with the vegetables and bring to a simmer.
- Add the fried tofu back into the pan and stir to coat with the sauce.
- Stir in the cornstarch slurry to thicken the sauce.
- Serve the Shanghai Style Sweet and Sour Tofu hot with steamed rice.
