Ingredients

  • 500g fresh Shanxi noodles
  • 1 liter chicken or vegetable broth
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 100g bok choy, chopped
  • 100g shiitake mushrooms, sliced
  • 2 green onions, thinly sliced
  • 4 hard-boiled eggs, halved

Instructions

  1. In a large pot, bring the broth to a boil.
  2. Add the light soy sauce, dark soy sauce, sugar, sesame oil, and white pepper to the broth. Stir to combine.
  3. Add the bok choy and shiitake mushrooms to the pot. Cook for 3-4 minutes until the vegetables are tender.
  4. Cook the Shanxi noodles according to the package instructions. Drain and divide among serving bowls.
  5. Ladle the hot broth and vegetables over the noodles in each bowl.
  6. Garnish with green onions and place a halved hard-boiled egg on top of each bowl.
  7. Serve the Shanxi Noodle Soup hot and enjoy!
