Ingredients
- 500g fresh Shanxi noodles
- 1 liter chicken or vegetable broth
- 2 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- 100g bok choy, chopped
- 100g shiitake mushrooms, sliced
- 2 green onions, thinly sliced
- 4 hard-boiled eggs, halved
Instructions
- In a large pot, bring the broth to a boil.
- Add the light soy sauce, dark soy sauce, sugar, sesame oil, and white pepper to the broth. Stir to combine.
- Add the bok choy and shiitake mushrooms to the pot. Cook for 3-4 minutes until the vegetables are tender.
- Cook the Shanxi noodles according to the package instructions. Drain and divide among serving bowls.
- Ladle the hot broth and vegetables over the noodles in each bowl.
- Garnish with green onions and place a halved hard-boiled egg on top of each bowl.
- Serve the Shanxi Noodle Soup hot and enjoy!
