Shanxi Style Fried Rice (山西炒饭)

Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/2 cup diced green onions
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add beaten eggs and scramble until cooked through. Remove from skillet and set aside.
  3. In the same skillet, add diced carrots and cook for 2-3 minutes until slightly softened.
  4. Add cooked rice, soy sauce, salt, and black pepper to the skillet. Stir well to combine.
  5. Add the scrambled eggs and diced green onions to the skillet. Stir-fry for another 2-3 minutes until everything is heated through.
  6. Remove from heat and serve hot.
