山西炒饭 (Shanxi Style Fried Rice) is a classic dish from Shanxi Cuisine, known for its simple yet flavorful ingredients and quick cooking method.
Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/2 cup diced green onions
- 1/4 cup soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add beaten eggs and scramble until cooked through. Remove from skillet and set aside.
- In the same skillet, add diced carrots and cook for 2-3 minutes until slightly softened.
- Add cooked rice, soy sauce, salt, and black pepper to the skillet. Stir well to combine.
- Add the scrambled eggs and diced green onions to the skillet. Stir-fry for another 2-3 minutes until everything is heated through.
- Remove from heat and serve hot.
