Ingredients

  • 1 cup cornmeal
  • 3 cups water
  • 1 teaspoon salt
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, bring the water to a boil.
  2. Slowly add the cornmeal to the boiling water, stirring constantly to avoid lumps.
  3. Add the salt and continue to stir until the mixture thickens, about 10-15 minutes.
  4. Remove the pot from the heat and let the mixture cool for a few minutes.
  5. Spread half of the cornmeal mixture onto the bottom of a greased baking dish.
  6. Sprinkle the crumbled feta cheese over the cornmeal layer.
  7. Cover the feta cheese with the remaining cornmeal mixture.
  8. Drizzle the olive oil over the top and sprinkle with black pepper.
  9. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the top is golden brown.
  10. Serve the shapkat hot and enjoy!
