Ingredients

  • 2 cups of white rice
  • 1 pound of chicken, cut into pieces
  • 1 cup of coconut milk

  • 1 cup of cabbage, shredded
  • 1 cup of fried tofu
  • 1 cup of fried tempeh
  • 4 hard-boiled eggs, halved
  • 1 cup of sambal belacan (spicy shrimp paste)

Instructions

  1. Wash the rice and cook it in a rice cooker.
  2. In a large pot, combine the chicken and coconut milk. Simmer until the chicken is cooked through.
  3. Blanch the green beans, carrots, and cabbage in boiling water for a few minutes. Drain and set aside.
  4. Arrange the cooked rice, chicken, vegetables, tofu, tempeh, and hard-boiled eggs on a large serving platter.
  5. Serve the sambal belacan on the side as a spicy condiment.
