Ingredients
- 2 cups of white rice
- 1 pound of chicken, cut into pieces
- 1 cup of coconut milk
- 1 cup of green beans, chopped
- 1 cup of carrots, sliced
- 1 cup of cabbage, shredded
- 1 cup of fried tofu
- 1 cup of fried tempeh
- 4 hard-boiled eggs, halved
- 1 cup of sambal belacan (spicy shrimp paste)
Instructions
- Wash the rice and cook it in a rice cooker.
- In a large pot, combine the chicken and coconut milk. Simmer until the chicken is cooked through.
- Blanch the green beans, carrots, and cabbage in boiling water for a few minutes. Drain and set aside.
- Arrange the cooked rice, chicken, vegetables, tofu, tempeh, and hard-boiled eggs on a large serving platter.
- Serve the sambal belacan on the side as a spicy condiment.
