Sharlotka Surprise
Sharlotka Surprise is a classic Russian apple cake that is light, fluffy, and bursting with the flavors of fresh apples. This recipe adds a surprise element to the traditional Sharlotka by incorporating a layer of creamy custard in the middle, making it an extra special treat for any occasion.
Ingredients
- 4 large apples, peeled, cored, and thinly sliced
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the flour and granulated sugar. Add the eggs and vanilla extract, and mix until smooth.
- Gently fold in the melted butter until fully incorporated. Pour in the milk and mix until the batter is smooth.
- Arrange half of the apple slices in the bottom of the prepared cake pan. Pour half of the batter over the apples.
- In a separate bowl, whisk together the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the batter in the cake pan.
- Layer the remaining apple slices on top of the whipped cream, then pour the remaining batter over the apples.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the Sharlotka Surprise to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
