Shashlik (azerbaijani Style Beef Kebabs)
Shashlik is a popular dish in Azerbaijani cuisine, consisting of marinated and grilled beef kebabs. The marinade infuses the meat with rich flavors, making it tender and juicy when cooked. This recipe will guide you through creating delicious Azerbaijani-style beef kebabs that are perfect for a gathering or a family meal.
Ingredients
- 1.5 lb (700g) beef sirloin, cut into 1-inch cubes
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 1/4 cup (60ml) plain yogurt
- 2 tablespoons red wine vinegar
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional, for a spicy kick)
- 4 metal or wooden skewers
Instructions
- In a large bowl, combine the chopped onion, minced garlic, olive oil, yogurt, red wine vinegar, cumin, paprika, black pepper, salt, and cayenne pepper (if using).
- Add the beef cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
- Preheat the grill to medium-high heat.
- Thread the marinated beef cubes onto the skewers, leaving a little space between each piece.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness and has a nice charred exterior.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
