Shashlik Dzhiget (walnut-stuffed Chicken)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup walnuts, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cut a pocket into each chicken breast.
  2. In a bowl, mix together the walnuts, onion, garlic, coriander, cumin, paprika, cayenne pepper, salt, and pepper.
  3. Stuff each chicken breast with the walnut mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Add the stuffed chicken breasts and cook for 6-8 minutes on each side, or until cooked through.
  6. Remove the chicken from the skillet and set aside.
  7. In the same skillet, pour in the chicken broth and simmer for 5 minutes, scraping up any browned bits from the bottom of the pan.
  8. Pour the sauce over the stuffed chicken breasts and serve.
