Shashlik Surprise (Шашлык)

Ingredients

  • 1 kg lamb or beef, cut into 1-inch cubes
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large bowl, combine the chopped onions, minced garlic, olive oil, white vinegar, salt, black pepper, paprika, cumin, cayenne pepper, and fresh cilantro. Mix well to create the marinade.
  2. Add the meat cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated meat onto skewers, alternating with pieces of onion if desired.
  5. Grill the shashlik for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.
  6. Remove the shashlik from the grill and let it rest for a few minutes before serving.
