Shashlik (tender Lamb Kebabs)
Shashlik is a popular dish in Uzbek cuisine, featuring tender lamb kebabs marinated in a flavorful mixture of spices and grilled to perfection. This dish is perfect for a gathering with friends and family, and it pairs well with rice or flatbread.
Ingredients
- 1.5 lbs (700g) lamb, cut into 1-inch cubes
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped onion, minced garlic, olive oil, red wine vinegar, cumin, paprika, coriander, salt, and pepper. Mix well to create the marinade.
- Add the cubed lamb to the marinade and toss to coat the meat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness and has a nice charred exterior.
- Remove the kebabs from the grill and let them rest for a few minutes before serving. Enjoy the tender and flavorful shashlik with your favorite side dishes!
