Shashlik (tender Lamb Kebabs)

Ingredients

  • 1.5 lbs (700g) lamb, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped onion, minced garlic, olive oil, red wine vinegar, cumin, paprika, coriander, salt, and pepper. Mix well to create the marinade.
  2. Add the cubed lamb to the marinade and toss to coat the meat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece.
  4. Grill the kebabs for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness and has a nice charred exterior.
  5. Remove the kebabs from the grill and let them rest for a few minutes before serving. Enjoy the tender and flavorful shashlik with your favorite side dishes!
