Shashlyk (crimean Tatar Lamb Kebabs)
Shashlyk is a traditional Crimean Tatar dish of marinated lamb kebabs, popular in Cossack cuisine. The tender and flavorful meat is skewered and grilled to perfection, making it a favorite for outdoor gatherings and celebrations.
Ingredients
- 2 lbs lamb, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 large onion, cut into chunks
- 2 bell peppers, cut into chunks
Instructions
- In a bowl, whisk together olive oil, red wine vinegar, minced garlic, paprika, cumin, black pepper, and salt to make the marinade.
- Add the lamb cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb, onion, and bell peppers onto skewers, alternating between the meat and vegetables.
- Grill the shashlyk kebabs for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired doneness and the vegetables are tender and slightly charred.
- Remove from the grill and let the kebabs rest for a few minutes before serving.
