Ingredients

  • 2 lbs lamb, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 large onion, cut into chunks
  • 2 bell peppers, cut into chunks

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar, minced garlic, paprika, cumin, black pepper, and salt to make the marinade.
  2. Add the lamb cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb, onion, and bell peppers onto skewers, alternating between the meat and vegetables.
  5. Grill the shashlyk kebabs for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired doneness and the vegetables are tender and slightly charred.
  6. Remove from the grill and let the kebabs rest for a few minutes before serving.
