Shawarma (kajo-keji Kebab Wraps)
Shawarma, also known as Kajo-Keji Kebab Wraps, is a popular street food in South Sudan. This delicious dish features marinated meat, fresh vegetables, and flavorful sauces all wrapped in a warm flatbread.
Ingredients
- 1 lb boneless chicken thighs, thinly sliced
- 1/4 cup plain yogurt
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground turmeric
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 4 pita bread or flatbreads
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sliced red onions
- 1/4 cup chopped fresh parsley
- Garlic sauce and tahini for serving
Instructions
- In a bowl, mix the yogurt, olive oil, cumin, paprika, turmeric, cinnamon, salt, and pepper. Add the chicken slices and marinate for at least 1 hour.
- Heat a skillet over medium-high heat. Cook the marinated chicken for 5-7 minutes or until fully cooked.
- Warm the pita bread or flatbreads in the skillet for 1-2 minutes on each side.
- Assemble the shawarma wraps by placing the cooked chicken, lettuce, tomatoes, onions, and parsley on the flatbread. Drizzle with garlic sauce and tahini.
- Roll up the wraps and serve immediately.
