Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, thinly sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 4 pita bread or flatbreads
  • Sliced tomatoes, cucumbers, and lettuce for serving
  • Tahini sauce or garlic yogurt sauce for serving

Instructions

  1. In a large bowl, combine the sliced chicken, onion, garlic, cumin, paprika, turmeric, cinnamon, cayenne pepper, olive oil, salt, and pepper. Toss to coat the chicken evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 10-12 minutes, or until the chicken is cooked through and slightly charred.
  3. Warm the pita bread or flatbreads in the skillet or oven.
