Shawarma (yemenite Spiced Chicken Skewers)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cardamom
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 pita bread rounds
  • Sliced tomatoes, cucumbers, and red onions for serving

Instructions

  1. In a large bowl, combine the olive oil, garlic, cumin, turmeric, coriander, cardamom, cayenne pepper, salt, and pepper. Add the chicken cubes and toss to coat. Marinate for at least 30 minutes.
  2. Thread the marinated chicken cubes onto skewers.
  3. Heat a grill pan or skillet over medium-high heat. Cook the chicken skewers for 12-15 minutes, turning occasionally, until cooked through and slightly charred.
  4. Warm the pita bread rounds in the oven or on the stovetop.
  5. Remove the chicken from the skewers and serve with warm pita bread, sliced tomatoes, cucumbers, and red onions.
