Sheer Khurma (afghan Rice Pudding)
Sheer Khurma is a traditional Afghan rice pudding that is often served during special occasions and festivals. This rich and creamy dessert is made with vermicelli, milk, sugar, and flavored with cardamom and saffron. It's a deliciously indulgent treat that is sure to impress your guests.
Ingredients
- 1 cup vermicelli
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 cup ghee
- 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
- 1/4 cup raisins
- 1/2 tsp cardamom powder
- A pinch of saffron strands
Instructions
- In a large pan, heat ghee and add the vermicelli. Sauté until golden brown.
- Pour in the milk and bring to a gentle boil. Simmer for 15-20 minutes, stirring occasionally.
- Add sugar, cardamom powder, saffron, mixed nuts, and raisins. Cook for another 5-7 minutes until the vermicelli is soft and the mixture thickens.
- Remove from heat and let it cool slightly before serving.
