Sheer Khurma (afghan Rice Pudding)

Ingredients

  • 1 cup vermicelli
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup ghee
  • 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
  • 1/4 cup raisins
  • 1/2 tsp cardamom powder
  • A pinch of saffron strands

Instructions

  1. In a large pan, heat ghee and add the vermicelli. Sauté until golden brown.
  2. Pour in the milk and bring to a gentle boil. Simmer for 15-20 minutes, stirring occasionally.
  3. Add sugar, cardamom powder, saffron, mixed nuts, and raisins. Cook for another 5-7 minutes until the vermicelli is soft and the mixture thickens.
  4. Remove from heat and let it cool slightly before serving.
