Sheer Khurma is a traditional Afghan dessert that is often made during special occasions such as Eid. This sweet and creamy cardamom-infused rice pudding is a delightful treat for anyone with a sweet tooth.

Ingredients

  • 1 cup vermicelli noodles
  • 1/4 cup ghee (clarified butter)
  • 1/2 cup mixed nuts (almonds, pistachios, cashews)
  • 1/4 cup raisins
  • 1 cup sugar
  • 1/2 tsp ground cardamom
  • 1 liter milk
  • 1/2 cup long-grain rice
  • 1/4 tsp saffron threads (optional)

Instructions

  1. Break the vermicelli noodles into small pieces.
  2. In a large pot, heat the ghee over medium heat and add the vermicelli noodles. Sauté until golden brown.
  3. Add the mixed nuts and raisins to the pot and sauté for another 2-3 minutes.
  4. Stir in the sugar, ground cardamom, milk, and rice. Bring to a gentle boil, then reduce the heat and simmer for 30-35 minutes, stirring occasionally.
  5. If using saffron, crush the threads and dissolve them in a tablespoon of warm milk. Add the saffron milk to the pot and stir well.
  6. Once the rice is cooked and the mixture has thickened, remove from heat and let it cool slightly before serving.
