Sheer Khurma (sweet Cardamom Rice Pudding)
Sheer Khurma is a traditional Afghan dessert that is often made during special occasions such as Eid. This sweet and creamy cardamom-infused rice pudding is a delightful treat for anyone with a sweet tooth.
Ingredients
- 1 cup vermicelli noodles
- 1/4 cup ghee (clarified butter)
- 1/2 cup mixed nuts (almonds, pistachios, cashews)
- 1/4 cup raisins
- 1 cup sugar
- 1/2 tsp ground cardamom
- 1 liter milk
- 1/2 cup long-grain rice
- 1/4 tsp saffron threads (optional)
Instructions
- Break the vermicelli noodles into small pieces.
- In a large pot, heat the ghee over medium heat and add the vermicelli noodles. Sauté until golden brown.
- Add the mixed nuts and raisins to the pot and sauté for another 2-3 minutes.
- Stir in the sugar, ground cardamom, milk, and rice. Bring to a gentle boil, then reduce the heat and simmer for 30-35 minutes, stirring occasionally.
- If using saffron, crush the threads and dissolve them in a tablespoon of warm milk. Add the saffron milk to the pot and stir well.
- Once the rice is cooked and the mixture has thickened, remove from heat and let it cool slightly before serving.
