Ingredients

  • 1 lb ground pork
  • 1/2 lb ground lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup breadcrumbs
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste
  • Caul fat, soaked in water

Instructions

  1. In a large bowl, combine the ground pork, ground lamb, onion, garlic, parsley, mint, breadcrumbs, cinnamon, nutmeg, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  2. Divide the meat mixture into equal portions and shape them into elongated sausage-like pieces.
  3. Wrap each portion of the meat mixture with a piece of soaked caul fat, securing it around the meat like a sausage casing.
  4. Preheat the grill to medium-high heat and lightly oil the grate.
  5. Grill the sheftalia for about 15 minutes, turning occasionally, until they are cooked through and have a nicely browned exterior.
  6. Remove from the grill and let them rest for a few minutes before serving.
