Sheftalia Sensation
Sheftalia Sensation is a traditional Cypriot dish that consists of deliciously seasoned ground meat wrapped in a casing of caul fat. This savory and juicy sausage is a popular choice for grilling and is perfect for a summer barbecue or a cozy family dinner.
Ingredients
- 1 lb ground pork
- 1/2 lb ground lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup breadcrumbs
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Salt and pepper to taste
- Caul fat, soaked in water
Instructions
- In a large bowl, combine the ground pork, ground lamb, onion, garlic, parsley, mint, breadcrumbs, cinnamon, nutmeg, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
- Divide the meat mixture into equal portions and shape them into elongated sausage-like pieces.
- Wrap each portion of the meat mixture with a piece of soaked caul fat, securing it around the meat like a sausage casing.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Grill the sheftalia for about 15 minutes, turning occasionally, until they are cooked through and have a nicely browned exterior.
- Remove from the grill and let them rest for a few minutes before serving.
