Sheikh El Mahshi (stuffed Eggplant With Rice And Meat)

Ingredients

  • 4 small eggplants
  • 1 cup ground beef or lamb
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • Salt and pepper to taste
  • 2 cups chicken or beef broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut off the tops of the eggplants and scoop out the flesh, leaving a shell. Chop the scooped-out flesh and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  4. Add the ground meat to the skillet and cook until browned. Stir in the chopped eggplant flesh, rice, diced tomatoes, tomato paste, cinnamon, allspice, salt, and pepper. Cook for 5 minutes.
  5. Stuff the eggplant shells with the meat and rice mixture.
  6. Place the stuffed eggplants in a deep pot. Pour the chicken or beef broth over the stuffed eggplants.
  7. Cover the pot and cook over low heat for 45-50 minutes, or until the rice is cooked and the eggplants are tender.
  8. Serve the Sheikh El Mahshi hot and enjoy!
