Sheikh El Mahshi (stuffed Eggplant With Rice And Meat)
Sheikh El Mahshi is a traditional Kuwaiti dish that consists of stuffed eggplant with rice and meat. This flavorful and hearty dish is a favorite in Kuwaiti cuisine.
Ingredients
- 4 small eggplants
- 1 cup ground beef or lamb
- 1 cup rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- Salt and pepper to taste
- 2 cups chicken or beef broth
Instructions
- Preheat the oven to 350°F (175°C).
- Cut off the tops of the eggplants and scoop out the flesh, leaving a shell. Chop the scooped-out flesh and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the ground meat to the skillet and cook until browned. Stir in the chopped eggplant flesh, rice, diced tomatoes, tomato paste, cinnamon, allspice, salt, and pepper. Cook for 5 minutes.
- Stuff the eggplant shells with the meat and rice mixture.
- Place the stuffed eggplants in a deep pot. Pour the chicken or beef broth over the stuffed eggplants.
- Cover the pot and cook over low heat for 45-50 minutes, or until the rice is cooked and the eggplants are tender.
- Serve the Sheikh El Mahshi hot and enjoy!
