Sheikh Mahshi (assyrian Stuffed Eggplant)

Ingredients

  • 4 small eggplants
  • 1 cup ground beef or lamb
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the eggplants and carefully scoop out the flesh, leaving the shells intact. Chop the scooped-out flesh and set aside.
  3. In a large bowl, combine the ground meat, rice, chopped onion, tomatoes, garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  4. Stuff the hollowed-out eggplants with the meat and rice mixture.
  5. Place the stuffed eggplants in a deep skillet or baking dish. Drizzle with olive oil and pour the broth into the bottom of the dish.
  6. Cover the skillet or dish with foil and bake for 45 minutes. Then uncover and bake for an additional 15 minutes, or until the eggplants are tender and the filling is cooked through.
  7. Serve the Sheikh Mahshi hot, garnished with fresh herbs if desired.
