Sheikh Mahshi (saudi Arabian Stuffed Eggplant)
Sheikh Mahshi is a traditional Saudi Arabian dish that features tender eggplants stuffed with a flavorful meat and rice filling. This dish is a delicious representation of Saudi Arabian cuisine and is perfect for a special family dinner or gathering.
Ingredients
- 4 small eggplants
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups tomato sauce
- 1 cup beef or vegetable broth
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the eggplants and carefully scoop out the flesh, leaving the shells intact. Chop the eggplant flesh and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
- Stir in the chopped eggplant, diced tomatoes, cooked rice, cumin, paprika, cinnamon, salt, and pepper. Cook for a few minutes until the mixture is well combined.
- Stuff the eggplant shells with the meat and rice mixture.
- In a separate bowl, mix the tomato sauce and broth. Pour the mixture into a baking dish and arrange the stuffed eggplants on top.
- Cover the baking dish with foil and bake for 45 minutes. Then, uncover and bake for an additional 15 minutes until the eggplants are tender.
- Remove from the oven and garnish with fresh parsley before serving.
