Sheikh Mahshi (saudi Arabian Stuffed Zucchini)
Sheikh Mahshi is a traditional Saudi Arabian dish made with stuffed zucchini, cooked in a flavorful tomato sauce. This dish is a popular choice for family gatherings and special occasions.
Ingredients
- 4 large zucchinis
- 1 cup rice
- 1 lb ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 cups chicken or vegetable broth
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the insides to create a hollow cavity.
- In a bowl, mix the rice, ground beef, onion, tomatoes, garlic, cumin, paprika, cinnamon, salt, and pepper.
- Stuff the zucchinis with the rice and beef mixture.
- In a large pot, combine the tomato sauce and broth. Place the stuffed zucchinis in the pot.
- Cover and cook over medium heat for 45 minutes, or until the zucchinis are tender and the filling is cooked through.
- Serve the Sheikh Mahshi hot, garnished with fresh parsley.
