Ingredients

  • 1 lb lamb or beef, cut into cubes
  • 2 tbsp ghee (clarified butter)
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 2 potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 4 cups beef or vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the ghee over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the meat to the pot and brown on all sides.
  3. Stir in the tomatoes, potatoes, carrots, cumin, coriander, turmeric, chili powder, salt, and pepper. Cook for a few minutes to allow the flavors to meld.
  4. Pour in the broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1 hour, or until the meat is tender.
  5. Adjust the seasoning if needed and serve the Sherpa Stew hot, garnished with fresh cilantro.
