Shev Bhaji (शेव भाजी)

Ingredients

  • 1 cup gram flour noodles (shev)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp asafoetida (hing)
  • 1 onion, finely chopped
  • 1 green chili, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander-cumin powder
  • 2 tomatoes, pureed
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add asafoetida, chopped onion, and green chili. Sauté until the onion turns golden brown.
  2. Add turmeric powder, red chili powder, and coriander-cumin powder. Mix well and cook for a minute.
  3. Now, add the tomato puree and salt. Cook until the oil separates from the masala.
  4. Pour water and bring the gravy to a boil.
  5. Add the gram flour noodles (shev) and cook for 5-7 minutes until they absorb the flavors of the gravy.
  6. Garnish with fresh coriander leaves and serve hot.
