Shev Bhaji (शेव भाजी)
शेव भाजी (Shev Bhaji) is a popular Maharashtrian dish made with crunchy gram flour noodles (shev) cooked in a spicy and tangy tomato-based gravy. It is a quick and easy recipe that is perfect for a delicious meal or snack.
Ingredients
- 1 cup gram flour noodles (shev)
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/2 tsp asafoetida (hing)
- 1 onion, finely chopped
- 1 green chili, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander-cumin powder
- 2 tomatoes, pureed
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds. Once they splutter, add asafoetida, chopped onion, and green chili. Sauté until the onion turns golden brown.
- Add turmeric powder, red chili powder, and coriander-cumin powder. Mix well and cook for a minute.
- Now, add the tomato puree and salt. Cook until the oil separates from the masala.
- Pour water and bring the gravy to a boil.
- Add the gram flour noodles (shev) and cook for 5-7 minutes until they absorb the flavors of the gravy.
- Garnish with fresh coriander leaves and serve hot.
