Ingredients

  • 4 large bell peppers
  • 2 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 3 tablespoons oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix the mashed potatoes, chopped onion, green chilies, ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt.
  4. Stuff the bell peppers with the potato mixture.
  5. Heat oil in a pan over medium heat and place the stuffed bell peppers in the pan.
  6. Cover and cook for 15-20 minutes, or until the bell peppers are tender.
  7. Serve hot with rice or roti.
