Shimla Mirch Pitha (stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a pan, heat 2 tbsp oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  4. Add the chopped tomatoes and cook until they turn mushy.
  5. Add the mixed vegetables, turmeric powder, red chili powder, garam masala, and salt. Cook for 5 minutes.
  6. Add the cooked rice to the vegetable mixture and mix well. Cook for another 2-3 minutes.
  7. Stuff the bell peppers with the rice and vegetable mixture.
  8. Place the stuffed bell peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender.
  9. Garnish with fresh coriander leaves before serving.
