Shimla Mirch Pitha (stuffed Bell Peppers)
Shimla Mirch Pitha is a traditional dish from Tripuri Cuisine, featuring bell peppers stuffed with a flavorful filling. This dish is perfect for a delicious and wholesome meal.
Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a pan, heat 2 tbsp oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the mixed vegetables, turmeric powder, red chili powder, garam masala, and salt. Cook for 5 minutes.
- Add the cooked rice to the vegetable mixture and mix well. Cook for another 2-3 minutes.
- Stuff the bell peppers with the rice and vegetable mixture.
- Place the stuffed bell peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender.
- Garnish with fresh coriander leaves before serving.
