Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon rose water
  • 1/4 cup slivered almonds, for garnish
  • 1/4 teaspoon ground cinnamon, for garnish

Instructions

  1. In a large pot, combine the rice and milk. Bring to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pot.
  2. Reduce the heat to low and simmer the rice, uncovered, for 30-35 minutes, or until the mixture has thickened to a pudding-like consistency, stirring occasionally.
  3. Stir in the sugar, ground cardamom, and rose water. Cook for an additional 5-10 minutes, or until the sugar has dissolved and the pudding is creamy.
  4. Remove the pot from the heat and let the pudding cool for 10-15 minutes.
  5. Divide the pudding into serving bowls and garnish with slivered almonds and a sprinkle of ground cinnamon.
  6. Serve the Shir Berenj warm or chilled, according to your preference.
