Shir Berenj (fragrant Cardamom Rice Pudding)
Shir Berenj, also known as Fragrant Cardamom Rice Pudding, is a traditional dessert from Bukharan Jewish Cuisine. This creamy and aromatic pudding is flavored with cardamom and rose water, making it a delightful treat for any occasion.
Ingredients
- 1 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon rose water
- 1/4 cup slivered almonds, for garnish
- 1/4 teaspoon ground cinnamon, for garnish
Instructions
- In a large pot, combine the rice and milk. Bring to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pot.
- Reduce the heat to low and simmer the rice, uncovered, for 30-35 minutes, or until the mixture has thickened to a pudding-like consistency, stirring occasionally.
- Stir in the sugar, ground cardamom, and rose water. Cook for an additional 5-10 minutes, or until the sugar has dissolved and the pudding is creamy.
- Remove the pot from the heat and let the pudding cool for 10-15 minutes.
- Divide the pudding into serving bowls and garnish with slivered almonds and a sprinkle of ground cinnamon.
- Serve the Shir Berenj warm or chilled, according to your preference.
