Shirataki Noodles

Shirataki noodles, also known as konjac noodles, are a low-carb, low-calorie alternative to traditional pasta. They are made from the konjac yam and are a popular ingredient in Asian cuisine.

Shirataki Noodles

Ingredients

  • 1 package of shirataki noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon minced garlic
  • 1/2 cup sliced vegetables (such as bell peppers, carrots, and snap peas)
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Open the package of shirataki noodles and drain the liquid. Rinse the noodles under cold water for 1-2 minutes.
  2. In a large pan, heat the sesame oil over medium heat. Add the minced garlic and cook for 1 minute.
  3. Add the sliced vegetables to the pan and stir-fry for 3-4 minutes until they are tender-crisp.
  4. Add the shirataki noodles, soy sauce, and half of the green onions to the pan. Stir-fry for 2-3 minutes until the noodles are heated through.
  5. Remove the pan from the heat and stir in the remaining green onions and chopped cilantro.
  6. Divide the noodles and vegetables between two plates and serve hot.
