Ingredients

  • 1 cup jasmine rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 cup rosewater
  • 1/4 cup chopped mixed nuts (almonds, pistachios, and walnuts)
  • 1/4 cup mixed dried fruits (raisins, apricots, and dates)

Instructions

  1. In a large pot, combine the rice and milk. Bring to a boil over medium heat, then reduce to a simmer. Cook, stirring occasionally, for 20 minutes or until the rice is tender and the mixture has thickened.
  2. Stir in the sugar and rosewater, and continue to cook for an additional 5 minutes.
  3. Remove the pot from the heat and let the pudding cool slightly.
  4. Divide the pudding into serving bowls and garnish with the chopped nuts and dried fruits.
  5. Refrigerate for at least 2 hours before serving to allow the flavors to meld.
