Shirin Polo is a traditional Bukharan Jewish rice pudding that is fragrant with cinnamon and studded with sweet raisins. This delightful dessert is perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 4 cups water
- 1/2 cup sugar
- 1/4 cup butter
- 1/2 teaspoon ground cinnamon
- 1/2 cup raisins
- 1/4 cup slivered almonds
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and cook for 10 minutes, then drain.
- In the same pot, melt the butter over medium heat. Add the cooked rice, sugar, cinnamon, raisins, and almonds. Stir to combine.
- Cover the pot and cook the rice pudding over low heat for 30 minutes, stirring occasionally.
- Once the rice is tender and the liquid is absorbed, remove from heat and let it sit for 5 minutes before serving.
