Ingredients
- 2 cups Basmati rice
- 1/4 teaspoon saffron threads
- 1/4 cup hot water
- 1/4 cup vegetable oil
- 1 large onion, thinly sliced
- 1/2 cup mixed berries (such as barberries, cranberries, or currants)
- 1/4 cup slivered almonds
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- Salt to taste
Instructions
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Dissolve the saffron in hot water and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown.
- Add the mixed berries, slivered almonds, cinnamon, and cardamom to the pot. Sauté for 2-3 minutes.
- Add the drained rice to the pot and stir gently to combine with the other ingredients.
- Pour the saffron water over the rice. Season with salt to taste.
- Place a clean kitchen towel or paper towel over the pot, then cover with a lid. Reduce the heat to low and cook for 45 minutes, or until the rice is tender.
- Once the rice is cooked, fluff it with a fork to mix in the saffron and distribute the berries and almonds evenly.
- Transfer the Shirin Polo to a serving platter, and garnish with additional berries and almonds if desired.
