Ingredients

  • 1/4 teaspoon saffron threads
  • 1/4 cup hot water
  • 1/4 cup vegetable oil
  • 1 large onion, thinly sliced
  • 1/2 cup mixed berries (such as barberries, cranberries, or currants)
  • 1/4 cup slivered almonds
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Dissolve the saffron in hot water and set aside.
  3. In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown.
  4. Add the mixed berries, slivered almonds, cinnamon, and cardamom to the pot. Sauté for 2-3 minutes.
  5. Add the drained rice to the pot and stir gently to combine with the other ingredients.
  6. Pour the saffron water over the rice. Season with salt to taste.
  7. Place a clean kitchen towel or paper towel over the pot, then cover with a lid. Reduce the heat to low and cook for 45 minutes, or until the rice is tender.
  8. Once the rice is cooked, fluff it with a fork to mix in the saffron and distribute the berries and almonds evenly.
  9. Transfer the Shirin Polo to a serving platter, and garnish with additional berries and almonds if desired.
