Ingredients
- 2 cups chickpea flour
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon berbere spice
- 1/2 teaspoon salt
- 2 cups water
- 2 tablespoons olive oil
- 1/4 cup chopped fresh cilantro
Instructions
- In a large bowl, mix the chickpea flour with water to form a thick batter.
- Heat the olive oil in a pan over medium heat and add the chopped onion. Cook until the onion is soft and translucent.
- Add the diced tomatoes, minced garlic, berbere spice, and salt to the pan. Cook for 5 minutes, stirring occasionally.
- Pour the chickpea batter into the pan, stirring constantly to prevent lumps from forming. Cook for 10-15 minutes, or until the batter thickens and becomes a fritter-like consistency.
- Sprinkle with chopped cilantro and serve hot.
