Shiro Firfir (chickpea Fritters)

Ingredients

  • 2 cups chickpea flour
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 teaspoon berbere spice
  • 1/2 teaspoon salt
  • 2 cups water
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large bowl, mix the chickpea flour with water to form a thick batter.
  2. Heat the olive oil in a pan over medium heat and add the chopped onion. Cook until the onion is soft and translucent.
  3. Add the diced tomatoes, minced garlic, berbere spice, and salt to the pan. Cook for 5 minutes, stirring occasionally.
  4. Pour the chickpea batter into the pan, stirring constantly to prevent lumps from forming. Cook for 10-15 minutes, or until the batter thickens and becomes a fritter-like consistency.
  5. Sprinkle with chopped cilantro and serve hot.
