Ingredients
- 2 cups chickpea flour
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 4 cups vegetable broth
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, dry roast the chickpea flour over medium heat for 5 minutes, stirring constantly.
- Add the chopped onion, minced garlic, grated ginger, turmeric, and paprika to the pot. Cook for another 5 minutes, stirring frequently.
- Pour in the vegetable broth and stir until the mixture is smooth and well combined.
- Simmer the stew for 15 minutes, stirring occasionally.
- Add the chopped spinach and cook for an additional 5 minutes until the spinach is wilted.
- Season with salt and pepper to taste.
