Ingredients

  • 2 cups chickpea flour
  • 1 onion, finely chopped

  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, dry roast the chickpea flour over medium heat for 5 minutes, stirring constantly.
  2. Add the chopped onion, minced garlic, grated ginger, turmeric, and paprika to the pot. Cook for another 5 minutes, stirring frequently.
  3. Pour in the vegetable broth and stir until the mixture is smooth and well combined.
  4. Simmer the stew for 15 minutes, stirring occasionally.
  5. Add the chopped spinach and cook for an additional 5 minutes until the spinach is wilted.
  6. Season with salt and pepper to taste.
