Ingredients
- 8 oz halloumi cheese, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into wedges
- 8 cherry tomatoes
- 8 button mushrooms
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix the olive oil, dried oregano, salt, and pepper.
- Thread the halloumi cheese, bell peppers, red onion, cherry tomatoes, and mushrooms onto the soaked skewers, alternating the ingredients.
- Brush the vegetable and halloumi skewers with the olive oil mixture.
- Grill the skewers for 3-4 minutes on each side, or until the halloumi is golden and the vegetables are tender.
- Remove from the grill and serve hot.
