Ingredients
- 1.5 lbs (700g) lamb, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 large red onion, cut into chunks
- 2 bell peppers, cut into chunks
Instructions
- In a bowl, mix together the olive oil, garlic, parsley, cilantro, cumin, paprika, cayenne pepper, salt, and pepper to create the marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated, then cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb cubes onto skewers, alternating with chunks of red onion and bell peppers.
- Grill the skewers for about 10 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
