Ingredients

  • 1.5 lbs (700g) lamb, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 large red onion, cut into chunks
  • 2 bell peppers, cut into chunks

Instructions

  1. In a bowl, mix together the olive oil, garlic, parsley, cilantro, cumin, paprika, cayenne pepper, salt, and pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated, then cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto skewers, alternating with chunks of red onion and bell peppers.
  5. Grill the skewers for about 10 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
