Shish Tawook (yemeni Spiced Chicken Skewers)

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into cubes
  • 1/4 cup plain yogurt
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 onion, cut into chunks
  • 1 bell pepper, cut into chunks

Instructions

  1. In a bowl, combine the yogurt, garlic, olive oil, tomato paste, paprika, cumin, cinnamon, cayenne pepper, salt, and pepper. Add the chicken cubes and toss to coat. Marinate for at least 1 hour, or overnight for best results.
  2. Preheat a grill or stovetop grill pan over medium-high heat. Thread the marinated chicken, onion, and bell pepper onto skewers.
  3. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  4. Serve the Shish Tawook hot with rice, salad, and pita bread.
