Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup plain yogurt
- 3 cloves garlic, minced

- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh mint
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 large red onion, cut into chunks
- 1 large bell pepper, cut into chunks
Instructions
- In a large bowl, combine the yogurt, garlic, olive oil, lemon juice, mint, paprika, cumin, salt, and pepper. Mix well to create the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the stovetop grill or a large skillet over medium-high heat.
- Thread the marinated chicken cubes, red onion chunks, and bell pepper chunks onto skewers.
- Place the skewers on the preheated grill or skillet and cook for 4-5 minutes per side, or until the chicken is cooked through and has a nice char.
- Remove the skewers from the heat and let them rest for a few minutes before serving.
