Ingredients

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon paprika
  • 1 teaspoon cumin

  • 1 large red onion, cut into chunks
  • 1 large bell pepper, cut into chunks

Instructions

  1. In a large bowl, combine the yogurt, garlic, olive oil, lemon juice, mint, paprika, cumin, salt, and pepper. Mix well to create the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
