Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 cups sugar
  • 1/4 teaspoon saffron threads
  • 1/4 cup rose water
  • 1/2 teaspoon ground cardamom
  • Slivered pistachios and almonds for garnish

Instructions

  1. Wash the rice and drain the water.
  2. In a pot, bring 2 cups of water to a boil, then add the rice. Reduce the heat to low, cover, and simmer for 25 minutes until the rice is soft and the water is absorbed.
  3. In a separate pot, dissolve the sugar in 3 cups of water over medium heat. Add the saffron, rose water, and cardamom, and let it simmer for 10 minutes.
  4. Add the cooked rice to the saffron syrup and cook over low heat for 20-30 minutes, stirring occasionally, until the mixture thickens.
  5. Pour the Sholeh Zard into serving dishes and let it cool to room temperature. Garnish with slivered pistachios and almonds before serving.
