Sholeh Zard (persian Rice Pudding)
Sholeh Zard is a traditional Persian rice pudding that is flavored with saffron, rose water, and cardamom. It is a popular dessert in Iran, especially during special occasions and celebrations.
Ingredients
- 1 cup basmati rice
- 2 cups water
- 2 cups sugar
- 1/4 teaspoon saffron threads
- 1/4 cup rose water
- 1/2 teaspoon ground cardamom
- Slivered pistachios and almonds for garnish
Instructions
- Wash the rice and drain the water.
- In a pot, bring 2 cups of water to a boil, then add the rice. Reduce the heat to low, cover, and simmer for 25 minutes until the rice is soft and the water is absorbed.
- In a separate pot, dissolve the sugar in 3 cups of water over medium heat. Add the saffron, rose water, and cardamom, and let it simmer for 10 minutes.
- Add the cooked rice to the saffron syrup and cook over low heat for 20-30 minutes, stirring occasionally, until the mixture thickens.
- Pour the Sholeh Zard into serving dishes and let it cool to room temperature. Garnish with slivered pistachios and almonds before serving.
