Sholeh Zard (rosewater Rice Pudding)

Ingredients

  • 1 cup white rice
  • 2 cups water
  • 2 cups sugar
  • 4 cups whole milk
  • 1/2 teaspoon saffron threads
  • 1/4 cup rosewater
  • Ground cinnamon, for garnish
  • Slivered pistachios, for garnish

Instructions

  1. In a large pot, combine the rice and water. Bring to a boil, then reduce heat and simmer until the rice is tender, about 15 minutes.
  2. Stir in the sugar and milk, and continue to cook over low heat, stirring frequently, for another 15-20 minutes until the mixture thickens.
  3. Meanwhile, crush the saffron threads and dissolve them in a little hot water. Add the saffron water and rosewater to the rice pudding, stirring well to combine.
  4. Remove the pot from the heat and let the pudding cool to room temperature.
  5. Once cooled, transfer the pudding to serving dishes and refrigerate for at least 2 hours before serving.
  6. Before serving, sprinkle the top of the pudding with ground cinnamon and slivered pistachios for garnish.
