Sholeh Zard (rosewater Rice Pudding)
Sholeh Zard is a traditional Armenian rice pudding flavored with saffron and rosewater, creating a delicate and aromatic dessert that is perfect for special occasions.
Ingredients
- 1 cup white rice
- 2 cups water
- 2 cups sugar
- 4 cups whole milk
- 1/2 teaspoon saffron threads
- 1/4 cup rosewater
- Ground cinnamon, for garnish
- Slivered pistachios, for garnish
Instructions
- In a large pot, combine the rice and water. Bring to a boil, then reduce heat and simmer until the rice is tender, about 15 minutes.
- Stir in the sugar and milk, and continue to cook over low heat, stirring frequently, for another 15-20 minutes until the mixture thickens.
- Meanwhile, crush the saffron threads and dissolve them in a little hot water. Add the saffron water and rosewater to the rice pudding, stirring well to combine.
- Remove the pot from the heat and let the pudding cool to room temperature.
- Once cooled, transfer the pudding to serving dishes and refrigerate for at least 2 hours before serving.
- Before serving, sprinkle the top of the pudding with ground cinnamon and slivered pistachios for garnish.
