Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 4 cups milk
  • 1 cup sugar
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon saffron threads
  • 2 tablespoons rosewater
  • Slivered almonds and pistachios for garnish

Instructions

  1. Wash the rice under cold water until the water runs clear.
  2. In a large pot, bring the water to a boil and add the rice. Cook for 5 minutes, then drain the rice.
  3. Return the pot to the stove and add the milk, sugar, cardamom, and saffron. Bring to a gentle simmer over medium heat, stirring occasionally.
  4. Add the parboiled rice to the milk mixture and cook on low heat for 45-50 minutes, stirring occasionally, until the pudding thickens.
  5. Stir in the rosewater and cook for an additional 5 minutes.
  6. Remove from heat and let the pudding cool slightly before serving. Garnish with slivered almonds and pistachios.
