Sholeh Zard (saffron And Rosewater Rice Pudding)
Sholeh Zard is a traditional Afghan dessert that is loved for its delicate flavors of saffron and rosewater. This creamy rice pudding is often served during special occasions and celebrations.
Ingredients
- 1 cup basmati rice
- 2 cups water
- 4 cups milk
- 1 cup sugar
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon saffron threads
- 2 tablespoons rosewater
- Slivered almonds and pistachios for garnish
Instructions
- Wash the rice under cold water until the water runs clear.
- In a large pot, bring the water to a boil and add the rice. Cook for 5 minutes, then drain the rice.
- Return the pot to the stove and add the milk, sugar, cardamom, and saffron. Bring to a gentle simmer over medium heat, stirring occasionally.
- Add the parboiled rice to the milk mixture and cook on low heat for 45-50 minutes, stirring occasionally, until the pudding thickens.
- Stir in the rosewater and cook for an additional 5 minutes.
- Remove from heat and let the pudding cool slightly before serving. Garnish with slivered almonds and pistachios.
