Sholeh Zard (saffron-infused Rice Pudding)
Sholeh Zard is a traditional Persian dessert that is infused with saffron and has a delicate, creamy texture. This sweet and aromatic rice pudding is a popular dish in Caspian cuisine, often served during special occasions and celebrations.
Ingredients
- 1 cup basmati rice
- 2 cups water
- 2 cups sugar
- 1/2 teaspoon ground saffron
- 1/4 cup rose water
- 1/4 cup slivered almonds
- 1/4 cup chopped pistachios
- Ground cinnamon for garnish
Instructions
- Wash the basmati rice and soak it in water for 2 hours.
- Drain the rice and cook it in 2 cups of water over low heat until soft and mushy, about 20 minutes.
- Dissolve sugar in 1 cup of water and add it to the cooked rice. Cook over low heat for 30 minutes, stirring occasionally.
- Dissolve ground saffron in 2 tablespoons of hot water and add it to the rice mixture. Cook for an additional 10 minutes.
- Stir in rose water and continue to cook for 5 minutes until the pudding thickens.
- Remove from heat and let it cool to room temperature.
- Transfer the pudding to serving dishes and garnish with slivered almonds, chopped pistachios, and a sprinkle of ground cinnamon.
