Sholeh Zard (saffron-infused Rice Pudding)

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 cups sugar
  • 1/2 teaspoon ground saffron
  • 1/4 cup rose water
  • 1/4 cup slivered almonds
  • 1/4 cup chopped pistachios
  • Ground cinnamon for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 2 hours.
  2. Drain the rice and cook it in 2 cups of water over low heat until soft and mushy, about 20 minutes.
  3. Dissolve sugar in 1 cup of water and add it to the cooked rice. Cook over low heat for 30 minutes, stirring occasionally.
  4. Dissolve ground saffron in 2 tablespoons of hot water and add it to the rice mixture. Cook for an additional 10 minutes.
  5. Stir in rose water and continue to cook for 5 minutes until the pudding thickens.
  6. Remove from heat and let it cool to room temperature.
  7. Transfer the pudding to serving dishes and garnish with slivered almonds, chopped pistachios, and a sprinkle of ground cinnamon.
